Spicy Jerk Chicken

Spice up the chicken in your life – jerk chicken!!

Marinate this chicken over night, or for at least two hours.




-2 boneless and skinless chicken breasts


-4 chili’s, minced

-3 garlic cloves, crushed

-1 tsp cloves

-1 tsp all spice

-1 tsp nutmeg

-salt and pepper to taste

-thyme – at least 3 tbsp worth

In a ziplock bag, add in 1/2c evoo, 4 chili’s,3 garlic cloves, the spices and thyme. Marinate over night, or for at least 2 hours.

pre heat your oven to 425F. When ready to cook, bring chicken to room temp. Preheat a sauce pan to medium-high heat. Brown chicken on both sides. Add 1/4 c marinade after the chicken is flipped and browned on the other side. Remove from the pan. Slide chicken in to the oven and cook for 17-25 minutes, or until chicken temp registers at 160F.

Spinach & goat cheese quesadillas

These are such a simple delicious dinner!! The flavour combination is a party in your mouth.



-12 small corn tortillas

-2 large red onions, halved and thinly sliced

-1 tbsp butter

-1tbsp EVOO

-1 clove garlic, minced

-1/4c basil, sliced thinly

-6-8 tbsp goat cheese

-1c shredded cheese (I used mozza.)

-6 tbsp sundried tomatoes

-1 handful of mixed greens or spinach

Caramelize your onions in a pan with the butter, garlic and basil.

Toast your tortillas in a pan or in the stove.

-Assemble:  Sprinkle tortillas with the shredded cheese, add goat cheese, then the tomatoes, the onions, 3-4 spinach leaves and more cheese, then place a tortilla on top. Do this with the rest of the tortillas to make 6 quesadillas.

broil in the oven until the cheese is melted.
