Juicy chicken with a dijon sauce

This is a recipe that has been on my blog for about a year now, and it needed some serious TLC. It was good before, but this is a much better version of it. Juicy BBQ’D chicken with a white wine dijon sauce. Make this alcohol free by using low sodium chicken stock in place of wine. Did I mention that this is a super quick cooking meal? It is!

Ingredients: (serves 2)

  • 2 6-8oz chicken breasts, pounded to 1/2″ thick
  • fresh ground sea salt
  • fresh ground pepper
  • 1/2 tsp garlic powder
  • 2 tbsp parsley, rough chopped (optional.)

For the sauce:

  • 1 TBSP EVOO
  • 1/2 white or yellow onion, small dice
  • 3 large cloves garlic, minced
  • 1c of your favourite white wine
  • 1 heaping TBSP dijon mustard
  • 1 heaping TBSP grainy dijon mustard
  • 1 tbsp butter
  • salt and pepper, to taste
  • 1/2 tbsp corn starch dissolved in 2 tbsp cold water

Directions:

  1. Preheat your oven or outdoor grill. (oven to 425.)
  2. In a medium skillet over medium heat, add 1 tbsp EVOO. Once the oil is hot, add your onions and brown them. Once your onions are browned, add your garlic, salt and pepper.
  3. Once your garlic is fragrant (1-2 min) deglaze your skillet with your white wine, stirring the mixture. Let the liquid reduce a little.
  4. Add in your dijon mustards (both kinds! if you only have one, then thats fine. add 2 tbsp of one kind.) and add in your butter. Once mixed, add in your cornstarch dissolved in water, and turn your heat down to low.
  5.  Season your chicken breasts on both sides with salt, pepper, and garlic powder. Place on your BBQ on a medium heat. Because the chicken is pounded nice and thin, it will take literally only minutes to cook. Cook for a few minutes on one side, and then flip and cook for another 5 minutes or so. I suggest using a meat thermometer and checking the internal temp of the chicken (165.)
  6. if you’re using the oven – season your chicken on both sides with salt, pepper and garlic powder. in a skillet on just over medium heat, add EVOO. Once your oil is hot, add your chicken. Brown it on both sides. Throw it into the 425 oven for 10-15 minutes.
  7. remove chicken from the grill and top with your dijon sauce. Sprinkle some fresh parsley over it if you like!

Home made Raviolli with spinach and ricotta filling

I honestly believe there is nothing in this world as amazing as home made pasta. It is SO fresh and so delicious, I swear I can’t go back to store bought boxes of pasta. You just need to find a really good recipe, and I have tried many. My favourite is from Chef Michael Smith. I made a home made tomato sauce as well, but I will not be posting it for a while, so you will have to make or buy your own!14355589_10157410985795099_816792382677748228_n

Ingredients:

-1 lb favorite pasta dough, rolled into  thin strips

-16 fl oz or 2 cups ricotta cheese

-4 cups spinach, chopped as small as you can get it!

-salt, pepper and a pinch of nutmeg

-1 egg, beaten

-1/4 cup parmigianno reggiano

For topping-

home made or store bought tomato sauce

basil

grated parmesan

 

Directions:

mix your ricotta, spinach, egg, parmigianno, salt and pepper and nutmeg together in a bowl.

Lay your pasta flat on a floured surface. Using a cup, or ravioli cutter, cut out circles big enough to hold 1 tsp of filling, or big enough to fold the pasta over itself. I cut out enough circles so I could put another piece of pasta over the filled ravioli. And then i just used an egg wash to help the edges stick together.

Bring a pot of water to a boil. Once the water is boiling, season the water with salt. A LOT of salt. Add your ravioli and cook for 7-9 minutes.

Add to a plate, throw pasta sauce on top and add some grated parmesan cheese and some basil.


Mexican Beef Taco’s with chimichurri

I made this one night for about 12 people, so I had to double what I am putting down here. it was a huge hit. Serve these bad boys with grilled street corn and spanish rice. They are sure to be a hit!!!!

Ingredients:

-12 corn tortillas

-1 large flank steak

Steak Rub:

-1/2 tbsp each of smoked paprika, chilli powder, oregano, thyme

-1 tsp each salt and pepper (taste the blend and add more if needed.)

-2 tsp corainder

Chimichurri sauce:

-1 bunch of cilantro (stems included. lots of flavour in those.)

-1 bunch parsley (stems also included.)

-zest and juice of 1 large lime, or 2 smaller limes.

-2 jalapeño peppers. for less heat, remove the seeds and ribs with a spoon.

-5 cloves garlic (i put garlic in everything. feel free to scale down this number.)

-1/2 of a small onion, rough chopped

-salt and pepper to taste. Add this in small amounts, taste the sauce and add more if needed.

-1/3-2/3c EVOO, or more if needed

 

Directions:

-Combine all steak rub ingredients in a small bowl and rub ALL over that steak. Make 1/4″ slits with a knife AGAINST the grain of the steak, throw in a baggie and marinate for about 2 hours. (You can skip the marinating. But I wouldn’t.)

-Heat your grill to medium heat. Once hot, throw your steak on the grill. Do NOT touch it until you can easily flip it without the meat sticking to the grill. If it sticks to the grill, that side is not done. I cook mine about 7 mins per side to get a nice medium-rare to medium.

Flip the steak and cook on the other side.

-In a blender or food processor, add all chimichurri ingredients except for the EVOO. Process until finely chopped. Start adding in your oil 1/3c at a time. Blend and add until your desired consistency.

-Take your steak off the grill. Place on a cutting board, cover with foil and let it rest for about 7-10 minutes. While your steak is resting, throw your corn tortillas on the grill and warm them through.

-Cut your steak nice and thin against the grain, and on a hard angle. This will help ensure the steak is not chewy.

-Build your taco’s! Add your steak, chimichurri, guacamole if you want, some pico de gallo..anything! Delish!

 


Herb buttered chicken and a white bean puree

Ingredients: (serves 2)

-2 boneless skinless chicken breasts, butterflied and flattened to less than 1/2″

-salt + pepper + red pepper flakes (enough to coat both sides of chicken)

-EVOO

-3 tbsp butter

-2 tbsp each minced garlic, parsley and oregano

For the white bean puree:

-Immersion hand blender or regular blender

-1 can white kidney beans, rinsed and drained

-1 cup chicken stock

-4 cloves garlic, chopped

-1 red onion, rough chopped

-salt and pepper, to taste

For the salad:

-1 large handful of arugula

-1 tbsp grainy dijon mustard

-1 tbsp red wine vinegar

-1/2 tsp honey

Directions:

Season both sides of pounded chicken with salt pepper and red pepper flakes. In a little bowl, add butter, garlic, parsley and oregano.

In a skillet over medium heat, add your EVOO. Once the pan is hot, add your chicken breast. Do not move the chicken, let it sit in the pan to brown and cook. After about 6-7 minutes, flip your chicken breasts and cook on the other side for another 6-7 minutes. Add your herbed butter, and continue cooking until the chicken is cooked through. This cooking time depends fully on how flat you’ve pounded your breasts. If you’re unsure of the doneness of your chicken, i suggest a kitchen thermometer. Chicken should be 160F.

In a medium sauce pan over just under medium heat, ands your onions and garlic. Cook until the onions are slightly translucent. Once they are, add your white kidney beans. Cook for another minute or two. Add your 1 cup of chicken stock. Season with salt and pepper. let these flavours boil and cook together for at least 7-10 minutes. After that, puree your mixture with a hand blender. (Or transfer to a regular blender.) Once blended, turn the heat to low and keep warm.

In a medium bowl, add your dijon, red wine vinegar and honey. whisk to mix together. Throw your arugula on top, and toss with your hands to coat the arugula with the dressing.

When ready, serve your chicken on top of your puree with your salad on the side.

This meal tastes best when you eat the puree , salad and chicken in one bite. Yummy!!


Warm Thai Steak Salad

I’ve got a hankering for something gingery and garlicky… And I just so happened to have a flank steak pulled out. Thai inspired steak salad, here we come!!

Ingredients:

1 flank steak

Marinade:

-1/4c sesame oil

-1/4c soy sauce

-3 tbsp worcestershire sauce

-2″ knob ginger, grated

-5 cloves garlic, minced

-2 tbsp sriracha sauce

-2 tbsp rice wine vinegar

Noodles:

-1 lb boccatini spaghetti, cooked

-2 tbsp tahini sauce

-1 heaping tbsp peanut butter

-1 tbsp honey

-2 cups romaine lettuce, chopped

-1/4c fresh chives, sliced

-lightly toasted sesame seeds

In a resealable freezer bag, add all your marinade ingredients. Score your flank steak across the grain from one end to the other. this will allow the marinade to sink in. Marinate 4 hours or over night.

Remove steak from the bag. KEEP the marinade. Pat the steak dry with paper towel. Turn your BBQ to medium-high heat. BBQ steak 6-7 mins a side for a medium rare. Remove from the BBQ and let rest.

in a sauce pan over low-medium heat, add your marinade and the rest of the sauce ingredients. (All except the sesame seeds and chives.) Bring to a boil, and let simmer. Once the sauce is thickened to your liking, add it to the noodles. Add your chopped up lettuce and mix. Top with steak, chives and sesame seeds.

Ingredients:

-2 boneless skinless chicken breasts, butterflied and flattened

-4 slices of prosciutto

-2 tbsp each of fresh oregano, thyme, parsley, and chives coarsely chopped

-6 slices fresh mozzarella cheese

-salt and pepper to taste

-1 FAT tbsp olive oil

For the sauce:

-2 garlic cloves, minced

-1 tbsp each of: oregano,thyme,parsley

-1.5c white wine

-1 tsp flour mixed in to 5 fl oz cream

Directions:

Preheat your oven to 425 F. Once you butterfly your chicken, use a pan or a tenderizer to flatten your breasts to the same thickness. You want them decently thin so you can stuff and roll them.

Season both sides of the breasts with salt and pepper. Place your mozza and fresh herbs on your chicken breasts. Roll up nice and tight. Wrap the chicken with 2 slices of prosciutto de parma.

In a skillet over med-high heat, add your EVOO. brown chicken on ALL sides. place in the oven and cook for 17-20 minutes, or until cooked through.

Once the chicken is done cooking, remove from the oven. Place chicken on a plate. Put your pan back on the stove on medium heat. (I always use frying pans that can go in the oven.) Add your garlic cloves to the chicken drippings. Saute for a minute until the garlic is fragrant. Add in your herbs, sauté. Add your white wine, and cook until it is reduced by almost half. Slowly whisk in your cream+flour mixture. Season with salt and pepper. Serve over the chicken.

 


Apple & Pear Stuffed Pork Loin

This pork tenderloin recipe has been an absolute hit! I am so happy that so many of you like it! Along with the revamping of the rest of my blog, I am also revamping some recipes and photo’s. The recipe for this is pretty much almost the exact same, but it has a different cooking method to ensure moist and juicy pork, and we added in some brie cheese. (Because why not?!) Hopefully you like this version just as much (if not more) than the last one! The fruit content has been cut down to a reasonable amount to stuff the pork tenderloin without too much overflow and waste. The left over apple and pear in this recipe that is NOT used on the pork, is used in this Spinach salad with a creamy brie poppy seed dressing. Enjoy!

Ingredients: (serves 2-3 with some left overs.)

  • 1/2 of an apple, sliced thinly. It’s your choice to peel or not to peel.
  • 1/2 of a pear, sliced thinly. it’s your choice to peel or not to peel.
  • 3 cloves garlic, sliced
  • 1 TBSP fresh rosemary, minced
  • 2 TBSP Evoo
  • 2 TBSP maple syrup
  • 1 pork tenderloin, butterflied and pounded to 1/4″ thick. (Thinner is better. don’t worry if you can’t get it quite this small.)
  • Enough salt, pepper and smoked paprika to season BOTH sides of your tenderloin
  • 3 heaping TBSP Brie cheese

Directions:

  1. Preheat oven to 425F
  2. In an ovenproof skillet over medium heat, add 1 tbsp EVOO. Let it get nice and warm. Add your sliced apples and pears. Cook until soft. Add in your sliced garlic and rosemary. Cook until your garlic is fragrant. Careful not to Burn your garlic. Remove from heat.
  3. Lay the mixture out into a line closest to one edge of your ALREADY seasoned pork tenderloin. Add the cheese along the line (all things stuffing the pork should be going from one side to the other.) Drizzle your maple syrup on top of the garlic and pear mixture.
  4. Start rolling your pork. Bring one end of the pork OVER the stuffing. Keep rolling nice and as tight as you can. Once you’ve rolled up the pork, secure it in at least 4 to 5 places with butcher twine.
  5. In the same oven proof skillet over med-high heat, drizzle another TBSP of EVOO. Let it get nice and hot. Sear your pork tenderloin on all sides. Let it sit for a few minutes on each side to get nice and browned to lock in all that flavour. Don’t flip your pork if the cooking side is still only white. IT MUST BE BROWNED.
  6. Once pork is seared on all sides, place it straight into the oven at 425F for 10-13 minutes, or until a meat thermometer reads 145F.
  7. Take pork out of the oven and move to a cutting board. Let it rest for 5-8 minutes. Then slice, and serve!
