Bacon Mango Rice

The perfect side dish for almost anything is RICE in my opinion!! My 14 month old son would also strongly agree… It’s simply one of our favourite things to eat!

Ingredients: (serves 4)

  • 1 1/4c dry jasmine rice
  • 2 1/2c water
  • 6 strips of bacon, diced
  • 1 mango, peeled and diced
  • 3 cloves garlic, minced
  • 1/2 white onion, diced
  • 4 TBSP butter
  • small handful of chives, chopped

Directions:

  1. Cook your rice according to package directions.
  2. In a large skillet over medium heat, add in your 6 slices of bacon. Cook until almost crisp (or however you like to eat your bacon.) Drain ALL of the bacon fat that you can out of the pan. Add in your onion, and cook until soft (a couple minutes.) Add in your garlic and your mangoes, cook while stirring for a minute or two.
  3. Once all your veg and fruit are done cooking, add 4 tbsp butter to your pan and then add in your cooked rice. Toss everything together and then let the rice sit for a couple minutes to crisp up a bit. Stir, and continue crisping up your rice.
  4. Add in your chives and toss everything together again. Serve along side some nice juicy tender Chipotle Mango BBQ’D Pork Tenderloin and carrots!

Spicy Jerk Chicken

Spice up the chicken in your life – jerk chicken!!

Marinate this chicken over night, or for at least two hours.

Ingredients:

-2 boneless and skinless chicken breasts

-evoo

-4 chili’s, minced

-3 garlic cloves, crushed

-1 tsp cloves

-1 tsp all spice

-1 tsp nutmeg

-salt and pepper to taste

-thyme – at least 3 tbsp worth

In a ziplock bag, add in 1/2c evoo, 4 chili’s,3 garlic cloves, the spices and thyme. Marinate over night, or for at least 2 hours.

pre heat your oven to 425F. When ready to cook, bring chicken to room temp. Preheat a sauce pan to medium-high heat. Brown chicken on both sides. Add 1/4 c marinade after the chicken is flipped and browned on the other side. Remove from the pan. Slide chicken in to the oven and cook for 17-25 minutes, or until chicken temp registers at 160F.


Cajun pulled pork taco’s

If there is something that I love more than anything, it’s taco’s. Throw some pulled pork in those bad boys and I am in love entirely. This is a great recipe for pulled pork taco’s, you must try it!

Ingredients:

10-15 corn tortilla shells

For the pork:

-1/4-1/2 c of your favourite cajun seasoning

-1 1lb pork tenderloin

-1 1/2c BBQ sauce

-1 1/2c chicken broth

For the slaw:

-1 large english cucumber, match sticked

-1 large carrot, peeled and grated

-1/2 bunch of cilantro, fine chopped

For the slaw dressing:

-1/4 c evoo

-1/4c rice wine vinegar

-2 tbsp honey – adjust to your taste

-salt and pepper

Directions:

Pat the pork tenderloin dry. season liberally on both sides. Place in a slow cooker. Add your bbq sauce and your chicken stock to the bottom of the pot. Do not pour over the pork as you want to keep that seasoning there. Cook on low for 8 hours. once the pork is finished cooking, you can shred it with two forks.  Reserve some of the cooking juices for mixing in to the shredded pork.

For the slaw: mix all of the dressing ingredients together, pour over the slaw. Toss.

Build your taco’s. These are really good with a sriracha mayo on them. Just mix sriracha, mayo and fresh lime juice!
