10 Spice Beer Can Chicken

It was 29 degrees today. WOW. What an ABSOLUTELY beautiful day!!! But on super hot days like today, I don’t really feel like heating up my house any more than it already is – so I decided to BBQ outside! Tonights dinner is a super simple, yet delicious (moist) beer can chicken!!!! If you have never tried something like this, I suggest you do. Serve it up with some BBQ’D sweet potatoes, and BBQ’D whole carrots, and a home made Caesar salad.

Ingredients:

  • 1 3-4LB whole chicken
  • 1/3c EVOO
  • 2 TBSP brown sugar
  • 2 TBSP garlic powder
  • 2 TBSP smoked paprika
  • 1 TBSP cumin
  • 1 TBSP coriander
  • 1 TBSP onion powder
  • 1 TBSP salt
  • 1 TBSP pepper
  • 1/2 TBSP cinnamon
  • 1 TSP cayenne pepper
  • 1/2 can of your favourite beer

Directions:

  1. Wash your bird thoroughly inside and out. Pat dry.
  2. In a small mixing bowl, mix together your brown sugar, garlic powder, smoked paprika, cumin, coriander, onion powder, salt, pepper, cinnamon and cayenne pepper and your evoo.
  3. Place your chicken in a LARGE bowl. Rub your seasoning paste all over the bird.
  4. Heat your outdoor grill to LOW on one side, and MEDIUM on the other side.
  5. Make sure to use some kind of drip tray safe for a BBQ to place your chicken on. Put the beer can in the chickens cavity, place standing up on the drip tray and put it on the LOW heat side of the BBQ. Close the lid. If the brown sugar on your chicken is getting black within the first 10-20 minutes of being on the grill, turn the heat down a little lower.
  6. Set a kitchen timer for 1 hour. This can take up to 90 minutes depending on the efficiency of your grill. My 4lb chicken only took about 1 hour.
  7. Once the thickest part of the chicken reads 165F, it is ready to come off the grill.
  8. Place chicken on a cutting board, let rest for 15 minutes.
  9. Once the chicken is well rested, carve and serve!

BBQ’d Chicken with a creamy avocado sauce

When your boyfriend buys a bag of avocado’s because they’re on sale – you must use them!!!  So here we go – easy and quick chicken  and veggies done on the BBQ with a creamy avocado sauce. It is absolutely divine. The sauce is light and creamy and pairs beautifully with the chicken. We loved it! and this time.. I paid attention to what i used and of how much. So, cheers to that!

Ingredients:

for the chicken:

-2 boneless skinless chicken breasts, butterflied and pounded to 1/4″

-salt and pepper to taste

-chili powder

-2 tbsp dijon mustard

-3 tbsp EVOO

-1/2 of a lime, juiced

For the avocado sauce:

-1 avocado, peeled

-1/2c full fat plain greek yogurt

-1 lime, zested and juiced

-1/4c honey

-salt and pepper, to taste

-1/2 tsp-1 tsp chili powder

In a small bowl, mix together the dijon mustard, the 3 tbsp EVOO and salt,chilli powder and pepper.

Season your chicken on both sides with salt, pepper and chilli powder. Heat your BBQ to medium heat. Throw chicken on the bbq. Baste with the mustard mixture. Cook for 5-7 minutes. Flip. Baste the other side with the dijon sauce. Cook another 5-7 minutes or until finished.

In a blender or a food processor, add all your sauce ingredients. Puree until smooth, and serve on the side or on top of the chicken.

 

Note- for the veggies, all I did was cut up peppers and onions, tossed them in oil, salted and peppered and cooked them on the BBQ, only turning once.

 


BBQ Chicken Drums

BBQ Chicken Drumsticks

Ingredients:

BBQ Sauce:

-1 small can of tomato paste

-1 c orange juice

-1/4c dijon mustard

-1/2c red wine vinegar

-1/4c franks red hot sauce

-1/4c soy sauce

-1/4c worcestershire sauce

-1/4c honey

-1c brown sugar

-1/4c chili powder

-2 tbsp paprika

-3 tbsp fresh cracked black peppercorns

-1/2-1 tbsp salt

-1 tsp each of garlic and onion powder

Drums:

-10 chicken drums, skin on

-salt and pepper to taste

-evoo for frying

Preheat oven to 375F

In a bowl, whisk together all the bbq sauce ingredients. Set aside.

Season drum sticks on both sides. In a pan over medium high heat, add enough EVOO to cover the bottom of the pan. Once hot, add your chicken drumsticks. Brown on all sides.

Once browned, remove from pan. Place chicken drums in an oven safe skillet and brush with your BBQ sauce. Place in the oven for 30 minutes, or until finished cooking- flip them once half way through. Once the drumsticks are done, remove from the oven and brush on some more BBQ sauce.

serve and enjoy! *Turn your oven up to broil (500f) For a minute or two to get a nice sticky bbq sauce glaze on the drums.
